I can think of a million ways to enjoy this great food! Small amounts of cheese adds color, variety and outstanding flavor to many appetizers, and meals. I understand, most people would not be eating their favorite cheese while on a diet….but the good news is, you just need to eat small amounts of the right cheese the correct way. Plus… when you include small amounts of cheese, you can help stop your craving for larger amounts of cheese, which can slow down your progress.

Keep in mind, throughout this article, when I mention cheese, I am referring to the low fat mozzarella cheese. The key is to always eat in moderation, just a little bit at a time for extra variety and taste!

Besides the wonderful texture and flavor of cheese, there are plenty of nutritional benefits! There is a very high content of protein which is great for building and repairing body tissues, healthy muscles, hair and nails; just to name a few.

This cheese is also high in calcium, which helps to maintain strong healthy bones. I’m sure you remember hearing drink your milk, it helps your bones! Well, the same applies to cheese! Although mom probably didn’t mention “cheese has phosphorus”, I think it is definitely worth mentioning. The phosphorus contained in cheese can help nerve function, muscles contract and also build and repair bones and teeth.

There are many varieties of delicious cheese, but in this report we are ing to stick with low fat mozzarella, regular or fresh. Regular mozzarella is available either low fat or nonfat and is drier in texture than the fresh mozzarella. Fresh mozzarella is somewhat sweeter in flavor and softer in texture. This cheese is available as whole, sliced or shredded.

Mozzarella cheese has a nice mild taste and can be enjoyed snacking on – all by itself! But, lets talk about some ways to add mozzarella cheese to our diet and make some beautiful food!

Lets make a diet pizza…very simple, just use a low calorie tortilla shell, add some crushed tomatoes, chopped onions, some lean ham, and a small amount of low fat mozzarella cheese. The door is wide open for many options of what to add on top! Try some roasted asparagus, pineapple, even grilled shrimp!

Many dips and sauces are made with some type of cheese. No problem there; just use the low fat version and add some spices. A great appetizer is a tomato & cheese “sandwich” – without the bread! Use two slices of tomato and add a slice of mozzarella cheese in between!

Another idea for a light lunch would be to eat only a half of a sandwich with small amounts of mozzarella and slices of tomato on the side.

Toss a small amount of shredded cheese on top of your salad for the extra nutrition and variety. A favorite of mine is low fat chicken cordon blue! Oh my, that will be my dinner tonight! Place a few slices of lean ham and low fat cheese in between baked chicken and warm until cheese is melted.

The list can go on and on; but I think you get the idea! So go ahead, and get creative and have fun. You will think of many ways your family and friends will enjoy low fat mozzarella cheese. And guess what, if you don’t tell them it’s low fat, most likely, they won’t even notice the difference!
