Many dips and sauces are made with some type of cheese. No problem there; just use the low fat version and add some spices. A great appetizer is a tomato & cheese “sandwich” – without the bread! Use two slices of tomato and add a slice of mozzarella cheese in between!
Another idea for a light lunch would be to eat only a half of a sandwich with small amounts of mozzarella and slices of tomato on the side.
Toss a small amount of shredded cheese on top of your salad for the extra nutrition and variety. A favorite of mine is low fat chicken cordon blue! Oh my, that will be my dinner tonight! Place a few slices of lean ham and low fat cheese in between baked chicken and warm until cheese is melted.
